Ingredients:
- 500g boneless chicken breast, sliced into thin strips
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 onion, sliced into thin strips
- 3 garlic cloves, minced
- 2 tbsp fermented black beans, rinsed and mashed with a fork
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 1 tbsp water
- Salt and pepper, to taste
Instructions:
- In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, water, and a pinch of salt. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the chicken strips and stir-fry for 5-6 minutes or until golden brown and cooked through. Remove from the wok and set aside.
- Add the remaining tablespoon of oil to the wok and stir-fry the red and green bell peppers and onion for 2-3 minutes or until they start to soften.
- Add the minced garlic and stir-fry for 1-2 minutes or until fragrant.
- Add the mashed black beans to the wok and stir-fry for 1 minute.
- Return the chicken to the wok and stir-fry everything together for 1-2 minutes.
- Pour in the soy sauce mixture and stir-fry for another 1-2 minutes or until the sauce thickens and coats everything.
