Ingredients:

4 chicken breasts, skinless and boneless
1 head of garlic
2 lemons, juiced
3 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper, to taste

Instructions:

Preheat your oven to 375°F (190°C).

Cut off the top of the garlic head to expose the cloves. Place the garlic head in a piece of foil and drizzle with 1 tablespoon of olive oil. Wrap the foil tightly around the garlic and place it in the oven to roast for 30-35 minutes, or until the cloves are soft and golden brown.

While the garlic is roasting, season the chicken breasts with salt, pepper, and thyme.

In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Once hot, add the chicken breasts and sear for 3-4 minutes on each side, until they are golden brown.

Once the garlic is roasted, remove it from the oven and let it cool for a few minutes. Then, remove the cloves from the head and add them to the skillet with the chicken.

Add the lemon juice to the skillet and stir everything together, making sure the chicken is coated in the garlic and lemon mixture.

Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through and the juices run clear.

Serve the chicken with the roasted garlic cloves and a side of your choice. Enjoy!
