Ingredients:

2 boneless, skinless chicken breasts, cut into small cubes
1/2 cup unsalted peanuts
1 red bell pepper, cut into small pieces
1 green bell pepper, cut into small pieces

Kung Pao Chicken
1/2 cup diced onion
2 cloves garlic, minced
1/2-inch piece of fresh ginger, minced
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 tablespoon cornstarch
1 teaspoon sugar
1/2 teaspoon crushed red pepper flakes (adjust to taste)
Salt and pepper to taste
Sliced green onions for garnish

 

Instructions:

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, cornstarch, sugar, crushed red pepper flakes, salt, and pepper. Set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the chicken cubes and stir-fry until they are cooked through and lightly browned. Remove the chicken from the wok and set aside.

Kung Pao Chicken

In the same wok, add the peanuts and stir-fry for about 1-2 minutes until they are slightly toasted. Remove the peanuts from the wok and set aside.

Add the minced garlic and ginger to the wok and stir-fry for about 30 seconds until fragrant.

Add the diced onion and bell peppers to the wok and stir-fry for about 2-3 minutes until they are slightly tender.

Return the cooked chicken to the wok and pour the sauce mixture over the ingredients. Stir-fry for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.

Add the toasted peanuts to the wok and toss everything together for an additional minute.

Remove from heat and garnish with sliced green onions.

Serve the Kung Pao Chicken hot with steamed rice or noodles.
