Zucchini slice is a classic Australian dish that is made with grated zucchini, onion, bacon, cheese, flour, baking powder, salt, and pepper. It is easy to make and very delicious. The zucchini adds moisture and flavor to the slice, while the bacon and cheese give it a salty and savory taste. The flour and baking powder helps to bind the ingredients together and give the slice a crumbly texture.

This recipe is for a classic zucchini slice, but you can easily customize it to your own taste. For example, you can add other vegetables, such as carrots, capsicum, or mushrooms. You can also omit the bacon if you want to make a vegetarian zucchini slice.

Ingredients:

2 large zucchini, grated
1 onion, chopped
10 rashers of bacon, cooked and chopped
1 cup grated cheddar cheese
1/2 cup plain flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
6 eggs, lightly beaten

Zucchini Slice

Instructions:

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease and line a 9×13-inch baking dish.

In a large bowl, combine the zucchini, onion, bacon, cheese, flour, baking powder, salt, and pepper. Stir in the eggs until just combined.

Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Let cool in the pan for 10 minutes before cutting into squares and serving.

Tips:

To make sure the zucchini slice doesn’t get too soggy, make sure to squeeze out as much moisture as possible from the grated zucchini. You can do this by placing the zucchini in a colander and pressing down on it with a paper towel.

If you want to make a vegetarian zucchini slice, simply omit the bacon.

You can add other vegetables to the zucchini slice, such as carrots, capsicum, or mushrooms.

Serve the zucchini slice with a side salad or some crusty bread.
