Generally speaking, those who follow a plant-based diet and lifestyle are not always satisfied with liquor coffee. Sometimes you want to have a nice cup of coffee with cream and caramel. So let’s see three types of coffee recipes made with coconut milk.
Hot mocha coffee
2 cups of thick coconut milk, 1 cup of freshly brewed coffee liqueur, 2 tablespoons of cocoa powder, sugar or any other sweetener, ½ teaspoon of vanilla extract.
Combine coffee, coconut milk and vanilla extract in a large mug and mix well by hand or with a beater. Then after it boils in the stove, reduce the flame and let it burn for a while.
Then sift the cocoa powder in a sieve. This will prevent the cocoa powder from clumping. Add sugar or other sweetener if you prefer sweeter coffee. Enjoy the heat.
Thai iced coffee
A quarter of a cup of coffee liqueur, a little less than half a cup of cold water, 1 tablespoon of vanilla, a few mint leaves, a little syrup, half a cup of coconut milk, a few pieces of ice.
Infuse coconut milk with vanilla extract, mint and syrup. When thick, drain and cool.
Now put coffee in a glass or tall mug first, then cold water and ice.
Finally pour mint cooled coconut milk. Enjoy delicious mint flavored Thai iced tea.
