2 boneless, skinless chicken breasts, cut into small cubes
1/2 cup unsalted peanuts
1 red bell pepper, cut into small pieces
1 green bell pepper, cut into small pieces
1/2 cup diced onion
2 cloves garlic, minced
1/2-inch piece of fresh ginger, minced
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 tablespoon cornstarch
1 teaspoon sugar
1/2 teaspoon crushed red pepper flakes (adjust to taste)
Salt and pepper to taste
Sliced green onions for garnish
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, cornstarch, sugar, crushed red pepper flakes, salt, and pepper. Set aside.
Heat vegetable oil in a wok or large skillet over medium-high heat. Add the chicken cubes and stir-fry until they are cooked through and lightly browned. Remove the chicken from the wok and set aside.
In the same wok, add the peanuts and stir-fry for about 1-2 minutes until they are slightly toasted. Remove the peanuts from the wok and set aside.
