Here’s a simple recipe for a popular Bangladeshi pitha called “Patishapta.” Patishapta is a sweet pancake filled with a mixture of coconut, khoya (reduced milk), and jaggery.

Patishapta Pitha Recipe Ingredients:

For the Pancake Batter:

  • 1 cup rice flour
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup water (adjust for consistency)
  • A pinch of salt
  • 2 tablespoons sugar

For the Filling:

  • 1 cup grated coconut
  • 1 cup khoya (reduced milk)
  • 1 cup jaggery (grated or chopped)
  • 1/2 teaspoon cardamom powder

Instructions:

  1. Prepare the Filling:
    • Heat a pan on medium heat.
    • Add grated coconut, khoya, and jaggery to the pan.
    • Stir continuously until the mixture thickens and combines well.
    • Add cardamom powder and mix. Remove from heat and let it cool.
  2. Make the Pancake Batter:
    • In a mixing bowl, combine rice flour, all-purpose flour, sugar, and a pinch of salt.
    • Gradually add milk and water to make a smooth batter with a pouring consistency.
  3. Cook the Pancakes:
    • Heat a non-stick pan or a griddle over medium heat.
    • Grease the pan with ghee or oil.
    • Pour a ladle full of batter onto the pan and spread it in a circular motion to make a thin pancake.
    • Cook until the edges start to lift, and the bottom is golden brown.
    • Place a spoonful of the coconut and khoya filling along one edge of the pancake.
  4. Roll the Pancakes:
    • Carefully fold the other side of the pancake over the filling, creating a roll.
    • Press gently to seal the edges.
    • Remove from the pan and repeat the process with the remaining batter and filling.
  5. Serve:
    • Patishapta is traditionally served at room temperature. You can garnish it with additional coconut or drizzle with honey if desired.
